Use Chia seeds as an egg substitute: 1 egg replacement = 1 Tbsp Chia seeds and 3 Tbsp water. Grind Chia seeds into a meal and mix with water. Allow to sit for 5-10 minutes or until it takes on a texture similar to raw egg yolk. Gel recipe: Use 1/3 cup Chia seeds to 2 cups water or juice to create gel to mix with drinks or use in cooking. Keep refrigerated.
